Sauerkraut with mushrooms in pots

2 servings

40 minutes

Sauerkraut with mushrooms in pots is a traditional Czech dish that embodies the coziness and depth of its flavors. The recipe is based on tangy, crunchy cabbage combined with aromatic mushrooms, golden-fried onions, and carrots. The dish is prepared in clay pots, giving it a unique texture and rich flavor. During baking, the ingredients absorb a deep mushroom aroma, creating a harmonious blend of sourness, sweetness, and spiciness. This dish is perfect for winter evenings, warming with its rich taste and homely atmosphere. In the Czech Republic, it is often served with crispy bread or potato pancakes, complementing the traditional flavor with light accents of spices and herbs.

Cooking steps
  • 1

Take about half a pack of frozen mushrooms and pour warm boiled water over them. Leave for a while.

    Required ingredients:
    1. Mushrooms200 pieces
  • 2

Meanwhile, chop the onion finely (however you like), and chop the carrot too (I'm not a fan of thickly sliced carrots, so I grate it on a fine grater — plus, it cooks faster that way). Throw all this into a frying pan, previously pouring some vegetable oil, and fry until it becomes a golden-orange mass. You can add spices to taste while frying. I add garlic, a bit of red and black pepper.

    Required ingredients:
    1. Onion1 head
    2. Carrot1 piece
  • 3

Take the sauerkraut, rinse it in cold water. You can also add it to the carrots or sauté it in a separate pan.

    Required ingredients:
    1. Sauerkraut400 g
  • 4

All other ingredients, such as sweet pepper or other vegetables, are chopped finely.

  • 5

So, while you are chopping, don't forget to stir the frying mixture of carrots and onions, the mushrooms will have time to infuse.

We place a small piece of butter at the bottom of the pot (though this is more of a whim, it can be done without it), layer half of the washed cabbage, then a layer of carrots with onions, then mushrooms (do not pour out the water they were soaked in). Next, add whatever you like (in my case, sweet pepper), and the last layer is cabbage. We pour in the water left from the mushrooms, making sure it doesn't completely cover the top layer of cabbage.

    Required ingredients:
    1. Sauerkraut400 g
    2. Mushrooms200 pieces

We place the pots in the oven and wait for 30-40 minutes. At a temperature of 200 degrees, then reduce to 150.
