Cut the meat into small pieces. Peel the red onion and cut it into 8 pieces. Peel the apple and cut it into 8 slices.
- Pork tenderloin: 700 g
- Green apples: 1 piece
- Red onion: 1 head

For the sauce, mix jam, vinegar, tomato paste, and 1 tablespoon of olive oil in a bowl. Add salt and pepper.
- Apricot jam: 0.5 glass
- Apple cider vinegar: 2 tablespoons

- Extra virgin olive oil: 2 tablespoons
- Coarse salt: to taste
- Freshly ground black pepper: to taste

Skewer the meat, alternating with onion and apples. Brush the skewers with the remaining olive oil. Season with salt and pepper.
