Preheat the oven to 230 degrees.

Cut the chicken into 8 pieces. Chop the fennel into small pieces. Halve the shallots lengthwise. Peel the apples and cut them into 4 pieces.

Place the bird with vegetables on 2 trays and sprinkle with sage.
