Preheat the oven to 100 degrees. Place the beans in boiling salted water and cook for eight minutes, so they remain crunchy. Immediately cool them in ice water.

Dice the onion and bacon. Heat butter in a large skillet and fry the bacon and onion until golden. Then transfer to a separate dish.

Peel the potatoes and slice them into 5-millimeter thick rounds. Fry the potatoes in the remaining melted butter over medium heat on all sides.

Wash and dry the meat, season with salt and pepper. Place in a pan and fry on both sides for three minutes each, transfer to a plate. Clean the garlic. Wrap the fillet in aluminum foil with garlic, thyme, and rosemary. Send the meat to the oven and let it rest. Sauté the remaining mixture with red wine and beef broth.
