In a small bowl, mix lemon juice and zest, oregano, olive oil, 2 teaspoons of coarse salt, and 1 teaspoon of pepper. Place the halved chicken in a bag and pour the marinade over it. Mix and let it sit at room temperature for 30 minutes, stirring occasionally.

Preheat the grill or barbecue.

Remove the chicken from the marinade and dry it with a paper towel. Place it skin-side down on a rack and fry until cooked, turning occasionally.
