Grate the zest, squeeze the juice from two lemons. Mix with garlic and olive oil. Add pepper.
- Lemon: 3 pieces
- Garlic: 2 cloves
- Extra virgin olive oil: 100 ml
- Ground black pepper: to taste

Cut the fish into strips 2 cm thick. Place in a dish and pour with marinade.
- Tuna: 1 kg

Roll the fish into rolls and pierce with wooden skewers (they need to be soaked in water beforehand). Leave for half an hour. Cut one lemon into segments and put a piece on each skewer.
