Tofu and pumpkin skewers with cilantro and ginger sauce

Preheat the grill or barbecue.

Cut tofu, pumpkin, and green onion into small pieces. Transfer to a bowl and add olive oil and a little salt and pepper. Mix well.
- Firm tofu: 400 g
- Pumpkin Squash: 2 pieces
- Green onion with bulb: 1 piece
- Extra virgin olive oil: 1 tablespoon
- Coarse salt: to taste
- Freshly ground black pepper: to taste

Skewer pieces of tofu and green onions, and separate pieces of pumpkin.
- Firm tofu: 400 g

Place skewers with pumpkin on the grill and cook for 11-13 minutes until done, turning them. Grill the tofu skewers for about 4-6 minutes, turning them. While grilling, brush with the cilantro and ginger sauce (see note).
