Remove seeds and stems from the peppers and cut them into 24 equal pieces.
- Red sweet pepper: 2 pieces

Preheat the grill or barbecue.

Skewer raw peeled shrimp and pieces of pepper.
- Peeled shrimp: 500 g
- Red sweet pepper: 2 pieces

In a small bowl, mix rum, olive oil, curry, allspice, and cayenne pepper. Brush the skewers and let them sit for 5 minutes. Then, add salt.
- Dark rum: 2 tablespoons
- Olive oil: 1 tablespoon
- Madras curry paste: 1.5 teaspoon
- Cayenne pepper: 0.3 teaspoon
- Ground allspice: 0.3 teaspoon
- Coarse salt: to taste

Place the skewers on the grill and cook for about 3-4 minutes until done. Serve with cilantro sauce (see note).
