Slice the onion into half rings. In a large skillet, heat 2 tablespoons of olive oil over medium heat, sauté the onion for about 15 minutes, stirring constantly. Add finely chopped garlic, sauté until soft. Remove from heat.
- Red onion: 2 pieces

Preheat the oven to 190 degrees. Rinse the beans and place them in a pot. Cover with water up to 7.5 cm. Bring to a boil and simmer for 30-40 minutes. The beans should be soft but not mushy.
- Large white beans: 500 g

Place the beans in a large baking dish, add onion, 3 tablespoons of olive oil, and 2 cups of water. Mix well. Cover the dish with foil and bake for about 1.5 hours until the beans are tender. To prevent the beans from burning, you can add more water during baking.

30 minutes before readiness, add sliced sausages to the mixture, and about 15 minutes before finishing, take the dish out of the oven and add the chopped peppers in their own juice, herbs, wine vinegar, tomato paste, and salt and pepper to taste. Mix well and put it back in the oven.
