In a bowl, mix miso, sake, mirin, soy sauce, and sugar. Pour the mixture into a plastic bag, add the fish, seal tightly, and mix well. Refrigerate overnight.
- Miso paste: 4 tablespoons
- Sake: 4 tablespoons
- Mirin: 2 tablespoons
- Soy sauce: 2 tablespoons
- Sugar: 1.5 tablespoon
- Salmon fillet: 2 pieces

Preheat the oven to 230 degrees.

Place the fish in the pan and send it to the oven for a few minutes until cooked, depending on the thickness of the fish.
