Peel and chop onion, ginger, and carrot coarsely, peel the thin outer layer of celery stalk with a vegetable peeler and chop it too, and slice the white part of the leek.

In a large pot, heat olive oil and add vegetables, stir well with a spatula, and cook for 5-10 minutes, stirring constantly until the vegetables are browned.

Wash the chicken well and add it to the vegetables, covering everything completely with water. Bring to a boil, reduce the heat, and add parsley, bay leaf, kaffir lime leaf, and black pepper to the broth. Cook for half an hour to an hour, constantly skimming off any foam that appears.
