Heat 2 tablespoons of olive oil in a large skillet. Add walnuts and sauté for 2-3 minutes. Transfer to a plate.

Coat the chicken breasts in flour.

In the same pan, heat the remaining olive oil and add finely chopped onion and minced garlic. Add the chicken and brown well on both sides. Then add the julienned carrot, wine, lemon juice, and thyme. Cover and simmer for 8 minutes. Then add the julienned pumpkin and zucchini and cook for another 2 minutes until tender.
