Cut the chicken into 10 pieces, place in a deep bowl, and pour in the marinade: olive oil, vinegar, lemon juice, wine, minced garlic, bay leaf, thyme, pepper, and coriander. Cover with a lid and marinate overnight (or at least 2 hours).

- White wine vinegar: 4 tablespoons
- Olive oil: 4 tablespoons
- White wine: 0.5 glass
- Lemon juice: 4 tablespoons
- Garlic: 2 cloves
- Bay leaf: 1 piece

Pat the chicken pieces dry with a paper towel, season with salt and pepper. Pour flour into a paper bag, add the chicken pieces, and shake to coat evenly with flour.

Fry the chicken in a pan until golden brown (in 1 cm of oil). Preheat the oven to 180°C, place the chicken pieces on a baking tray, and cook for 40 minutes until crispy. Serve with tomatoes, salad, and herbs.
