In a bowl, mix sugar, wine, lemon juice, salt, and pepper until the sugar dissolves.
- Brown sugar: 0.5 glass
- Dry white wine: 0.5 glass
- Lemon juice: 0.3 glass
- Salt: 0.5 teaspoon

Rinse the fish under cold water and dry it with a paper towel. Place it in the marinade, mix, cover with plastic wrap, and let it sit for 1.5-2 hours.

Remove the fish from the marinade and place it in the pan. Pour in the marinade, add butter, and set over medium heat until the butter melts. Cook for 4-5 minutes.
