Cover the chicken fillets with a piece of film and flatten them with the bottom of a pot to a thickness of 1 cm.
- Chicken breast: 4 pieces

Grate the parmesan. Tear the thyme leaves from the stems. Carefully make a cross incision on the inner side of the breasts. Season with pepper (no need to salt, the ham contains enough salt). Sprinkle most of the thyme over the breasts. Grate a little lemon zest on top, sprinkle with parmesan. Lay 3 slices of ham slightly overlapping on each breast. Drizzle with olive oil, sprinkle with remaining thyme.
- Parmesan cheese: 30 g
- Fresh thyme: 2 pieces
- Lemon: 1 piece

Heat a large skillet over medium heat. Remove the film, carefully place the chicken breasts in the skillet with the ham side down. Drizzle with olive oil. Cook for 3 minutes, flip, cook for another 3 minutes, flip again and cook for another 30 seconds – to brown the ham well.

Serve the breasts whole or sliced into wide pieces, piled on a plate. Serve with lemon slices, drizzled with olive oil.
