The dish is based on tender smoked duck meat soaked in a spicy sauce made from sherry, orange juice, soy sauce, and fresh ginger. For this salad, you will need ready-made duck breasts.

We remove the skin from the duck breasts, cut it into thin strips, and remove all the subcutaneous fat. We place the strips on a baking sheet and fry them until crispy. We place the strips on paper towels to completely remove excess fat.

Next, we prepare the sauce: pour cognac (or sherry) and orange juice into a pot and bring to a boil. Reduce the heat and simmer until the liquid volume is reduced by half. Then add soy sauce, sesame oil, sugar, finely grated ginger, and mix gently. The sauce is ready.

Now it is necessary to separate the duck meat from the bones, cut the meat into strips, and place it in a pot with sauce. Meanwhile, in a separate dish, we boil green peas (the peas should be added to boiling salted water). The boiled peas are rinsed under cold running water.
