Red potatoes with peppers and cheese is a bright, aromatic dish of European cuisine that combines the rich flavor of sweet potatoes, the sweetness of roasted peppers, and the tenderness of Adyghe cheese. The roots of the recipe trace back to Mediterranean cuisine where vegetables are often baked with minimal seasoning to reveal their natural taste. Sweet peppers enriched with garlic and olive oil acquire a rich aroma while sweet potatoes retain their softness and light sweetness. Adyghe cheese melts to give the dish a delicate creamy texture. It’s a great dish for a light dinner or warm home lunch.
