Beef rolls with bacon

A hearty Latvian dish and one of the variations on the Karlovy Vary roll, a traditional Czech snack. In the classic recipe, bacon, omelette and pickles are wrapped in a roll of thinly sliced meat and served with potatoes. This option contains fewer ingredients, but not calories, so it is best to choose a accompaniment that is not too heavy: a green or any vegetable salad will definitely not overload the dish, only its appearance and your taste buds.

Pound the escalope, season with salt and pepper. Cut the onion and fat into strips. Place some onion and fat on the escalope, roll it up, and tie it with string or secure it with a skewer.
- Escalope: 6 pieces
- Onion: 2 heads
- Lard: 200 g
- Salt: to taste
- Ground black pepper: to taste

Fry the rolls on each side in a pan with added sunflower oil.
- Sunflower oil: 2 tablespoons

Place the fried rolls in a pot, add water, add sour cream, salt, and pepper.
- Water: 0.5 l
- Sour cream: 5 tablespoon
- Salt: to taste
- Ground black pepper: to taste

Cook for 30–40 minutes. Add bay leaf 5 minutes before done. Remove threads and skewers before serving.
