Sausages in curry sauce are a simple yet incredibly aromatic dish that combines the juiciness of meat sausages with the richness of spicy seasonings. Although its roots lie in American cuisine, it carries Indian notes due to the use of curry and garam masala. Place the sausages in a pot, cover with cold water, and bring to a boil. Reduce the heat and cook for 3 minutes. Remove from heat and let cool. Cut into 2 cm pieces.

Heat vegetable oil in a pan over high heat and fry the sausages for 2-3 minutes until golden brown. Transfer to a paper towel.

In the same pan, melt the butter, add ginger, minced garlic, and onion. Sauté over medium heat for 5 minutes until the onion is soft. Add curry and garam masala and cook for another minute, then add tomato paste and cook for 1 minute. Add flour, mix, and gradually pour in the broth. Bring to a boil, add bay leaves and sausages, and simmer for 15 minutes. Sprinkle with spices and serve with mashed potatoes.
