Mix ginger, coriander, zest, and 2 tablespoons of lime juice. Spread 2 teaspoons of the mixture on each piece of chicken and sprinkle with spices and salt. Marinate for 1 hour. Mix the remaining mixture with the leftover lime juice for dressing.

Bring water to a boil in a large pot. Add rice and cook for 15 minutes, stirring occasionally. Drain.

Meanwhile, preheat the grill and lightly grease it with oil. Brush the sliced zucchini and mushrooms with the remaining oil. Place the chicken on the grill and cook for 4-5 minutes on each side. Add the vegetables to the grill 5 minutes before the chicken is done, turning them a few times. Transfer to a plate and cover with foil until serving.
