Lenten Green Rice

Firstly, you need to use jasmine rice: it is very tasty on its own. Secondly, a whole bunch of ingredients will give it additional flavors: olive oil, cilantro with spinach (they will also add colors), chili peppers and white onions with garlic, lime and sugar with salt. It turns out to be an excellent meal, which, like tabbouleh, can be eaten hot or cold.

Prepare all the ingredients.

Squeeze 30 ml of juice from the limes. Cut the remaining limes into wedges for serving.
- Lime: 3 pieces

Chop the onion and chili coarsely with seeds and put them in the blender bowl.
- White onion: 200 g
- Green chili pepper: 1 piece

Add cilantro, spinach, garlic, lime juice, and 0.5 teaspoon of salt to it.
- Coriander: 30 g
- Spinach: 30 g
- Garlic: 3 cloves
- Lime: 3 pieces
- Salt: to taste

Pour 100 ml of broth into the blender and blend until smooth.
- Vegetable broth: 700 ml

Heat olive oil in a pot and sauté the rice for 2-3 minutes.
- Olive oil: 40 ml
- Jasmine rice: 350 g

Pour in the remaining broth and add half of the green mixture.
- Vegetable broth: 700 ml

Bring to a boil and cook covered on low heat for 15 minutes. Then remove from heat and let the rice steam covered for another 15 minutes.
- Jasmine rice: 350 g

Mix the remaining green mixture into the rice. Taste and add salt or sugar to your liking.

Serve green rice as a standalone dish or as a side, garnished with a lime wedge and chili flakes.
