Thaw the fish. The best way to thaw fish is to transfer it from the freezer to the refrigerator, where it will gradually defrost. If the fish was bought by weight, first transfer it to a suitable container and cover it. The second safe and quick method for thawing fish is to take it out of the freezer and place it in a pot of cold water. If you bought the fish in a plastic bag, do not take it out. If the fish was bought by weight, put it in a bag, remove as much air as possible, and place it in cold water. The fish should not come into contact with water or air while thawing.

Clean the pollock from scales, cut off all fins, remove the insides, rinse well, and dry.

Peel the onion, wash it well, cut it into small cubes or strips, and place it in a baking dish.

Cut the fish into small pieces, season with salt and pepper to taste. Place the fish on top of the potatoes.

Spread sour cream on the fish, add 1 bay leaf, cover with a lid, and bake in the oven at 180 degrees for about 30 minutes.

Grate the hard cheese on a coarse grater. Remove the potatoes with fish from the oven, place the prepared cheese on top of the fish. Bake the dish in the oven for another 5-7 minutes under a closed lid at 180 degrees.
