Cod with cilantro and lemon in foil

Tear off the cilantro leaves.
- Coriander: 1 bunch

Grate the lemon zest with a fine grater and squeeze the juice from the pulp.
- Lemon: 2 pieces

Remove seeds and membranes from the hot pepper and chop finely.
- Fresh red pepper: 1 piece

Peel and finely chop the ginger and shallots.
- Ginger root: 1 head
- Shallots: 2 pieces

In a bowl, mix sugar with zest, add lemon juice, cilantro leaves, hot pepper, ginger, shallot, soy sauce, and pepper. Stir.
- Brown sugar: 1 tablespoon
- Lemon: 2 pieces
- Coriander: 1 bunch
- Fresh red pepper: 1 piece
- Ginger root: 1 head
- Shallots: 2 pieces
- Soy sauce: 8 tablespoons
- Ground black pepper: to taste

Cut eight pieces of foil and form them into eight little boats.

Place one cod steak in each, then spread the marinade on top.
- Cod fillet: 8 pieces

Close the boats and let them marinate for 1 hour.

Heat the grill over the coals.

Place the foil boats on the grill and bake the fish for 15-20 minutes.
