Sauté the turkey mince with chopped eggplant in a small amount of oil.

Dip the eggplant boats in boiling salted water for 2 minutes. Then carefully remove them with a slotted spoon.

Peel the tomatoes (for this, dip them for 1 minute in the water where the eggplant boats were blanched). Cut into small cubes.
