Draniki are golden, crispy potato pancakes lovingly prepared in every Belarusian family. Their history roots back to rural cuisine where potatoes became the basis of many dishes. The taste of draniki is rich, tender inside and appetizingly crispy outside, with a slight piquancy from onions and creamy softness from sour cream. They pair wonderfully with sour cream, mushrooms or even meat sauces, making them a versatile treat for both everyday and festive tables. This dish warms the soul, brings comfort and returns to the roots of traditional East Slavic cuisine.

Prepare the necessary ingredients.

Add baking soda to room temperature sour cream.
- Soda: pinch
- Sour cream: 10 g

Peel the raw potatoes, wash them well under running water, and let them dry a bit.
- Potato: 500 g

Grate the potato on a fine grater.

Add the prepared sour cream, salt, and pepper to the grated potatoes. Mix everything well.
- Sour cream: 10 g
- Salt: to taste
- Ground black pepper: to taste

Grate 100 grams of onion on a fine grater and add to the potato mixture. Mix well with a spoon.
- Onion: 100 g

Add a raw chicken egg to the onion-potato mixture and mix everything until smooth.
- Chicken egg: 1 piece

Add 3 tablespoons of wheat flour to the mixture and mix everything well.
- Wheat flour: 3 tablespoons

Pour vegetable oil into the pan and place it on the heat.
- Vegetable oil: 50 ml

Carefully place the batter for draniki onto the skillet using a tablespoon.

Fry the draniki on medium heat on both sides until golden brown. After flipping the draniki to the other side, cover the pan with a lid and fry until cooked. Place the finished draniki on a plate. It's best to serve them warm with sour cream.
