12 servings
120 minutes
Pork shoulder with young potatoes baked in a sleeve is a magnificent combination of tender meat and aromatic vegetables infused with spices and its own juice. This recipe has roots in European culinary traditions, where simplicity of preparation and rich flavor are valued. The shoulder marinated in spices gains special tenderness, while the young potatoes absorb the deep aroma of smoked paprika, garlic, and bay leaves. Baking in a sleeve helps retain juiciness and makes the dish's texture wonderfully tender. It is an ideal choice for a cozy family dinner or festive gathering where every guest will appreciate the richness of flavor nuances and appetizing presentation. Serve with herbs and fresh vegetables to highlight the natural harmony of ingredients.

1
Prepare the necessary ingredients.

2
Wash the meat well under running water, trim off any excess, cut into large cubes, and place in a bowl.
- Pork shoulder: 2 kg

3
Mix salt, pepper blend, ground garlic, and smoked paprika in a separate container and add to the bowl with the chopped meat.
- Salt: 2 teaspoons
- Ground pepper mix: 1 teaspoon
- Ground dried garlic: 1 teaspoon
- Smoked paprika: 1 teaspoon

4
Mix the meat well with the spices and let it marinate for 30-40 minutes.

5
Clean and wash the vegetables well.

6
Cut the potatoes into large wedges. About 4-6 pieces.
- New potatoes: 1500 g

7
Place the potatoes in a bowl. Cut the onion into half rings or strips and add it to the potatoes.
- Onion: 1 head

8
Cut the peeled carrot into medium-sized strips. Place it next to the potatoes and add 1 teaspoon of salt. Mix all the ingredients.
- Carrot: 100 g
- Salt: 2 teaspoons

9
Measure the length of the sleeve needed for baking (considering that the edges will need to be tied), cut it, and place it on the baking tray. Place the potatoes, onions, and carrots in the baking sleeve. Distribute the potatoes evenly in the sleeve.

10
Evenly place the prepared meat on top of the potatoes in the sleeve and add a bay leaf.
- Bay leaf: 3 pieces

11
Tie the edges of the sleeve on both sides. Bake in the oven at 170 degrees for about 1.5 hours.

12
Take the finished dish out of the oven, untie the edges of the sleeve before serving to prevent moisture from evaporating and keep the dish juicy.
