Fry the chopped onion in olive oil, add the minced meat, cook until done at a high temperature, then add diced tomatoes. Season with salt and pepper, set aside.

Slice the eggplants into thin (about 4 mm thick) slices and fry in olive oil for a few minutes on each side.

In a square baking dish (or a regular frying pan), layer eggplants, then add ground meat, and cover with tomato paste. Add another layer of eggplants and repeat all layers. Top with a final layer of eggplants, drizzle with tomato paste, cover with foil, and place in a preheated oven for 20-25 minutes.
