Fried zucchini is a vibrant dish of Greek cuisine that embodies its simplicity and rich flavors. Historically, zucchini has been widely used in Mediterranean cooking due to its tender texture and ability to absorb the aroma of spices. In this recipe, the vegetables are first fried until golden brown and then stewed with a juicy mix of herbs, sweet peppers, and tomatoes, creating a harmonious balance of sweetness, acidity, and freshness. Lemon juice adds a subtle citrus note to the dish while the herbs highlight the natural richness of flavors. Fried zucchini can be served as a standalone dish or as a side dish; they are perfect for summer meals, bringing the atmosphere of the Greek coast to the table.
