Rabbit in mustard breading is a refined dish of Mediterranean cuisine that combines tender meat with the tangy flavor of Dijon mustard. Historically, rabbit meat was considered a delicacy in Europe and was often prepared with aromatic spices and light sauces. In this recipe, the meat is marinated in a mustard-yogurt sauce that gives it tenderness and rich flavor. Grilling preserves juiciness while the crispy crust adds an appetizing texture. A side of golden potatoes fried in butter and duck fat highlights the harmony of the dish. Served with lemon slices, the rabbit acquires a subtle tartness, making it an ideal choice for a festive dinner or cozy family lunch. This dish captivates with its sophistication and simplicity of preparation.
