Chicken cutlets in an air grill are a light and juicy dish of Russian cuisine that combines simplicity of preparation with rich flavor. The recipe's origins trace back to traditional Russian cutlets, but the modern version is adapted for the air grill, making it less fatty yet equally flavorful. Tender chicken fillet mixed with cottage cheese and spices acquires an airy texture, while crispy breadcrumbs add an appetizing crust. Inside the cutlets lies a surprise—melted Adyghe cheese that gives the dish softness and creaminess. This is an excellent option for dietary meals and a convenient way to prepare a delicious dinner without excess oil. The cutlets can be served with greens and a light sauce, complemented by fresh vegetables.

Cut the chicken fillet into pieces and place it in the blender bowl.
- Chicken breast fillet: 500 g

Add spices and salt.
- Ground black pepper: pinch
- Salt: pinch
- Ground red pepper: pinch

Add cottage cheese (preferably fatty, in blocks). If there is no fatty cottage cheese, you can add lower-fat cottage cheese but include a piece of butter to prevent the patties from being dry. Optionally, grated cheese can be added. Then mix the ingredients in a blender. It’s better not to over-blend — it’s preferable for the meat to retain its structure; otherwise, the patties may turn out too dense.
- Cottage cheese: 20 g
- Butter: 10 g
- Cheese: 40 g

Pour the breadcrumbs into a separate container. Cut the cheese into pieces (the recipe calls for Adyghe cheese). Take a spoonful of the blender mixture, place a piece of cheese in the center, shape into patties, and coat in breadcrumbs.

Place the patties on a preheated wire rack.

Turn on the 'Chicken' program or, if not available, manually set the temperature and time (at 210 degrees and 13 minutes, it turns out perfectly).
