Preheat the oven to 150 degrees. Place the chicken breasts in a heatproof dish, sprinkle with herbs, and add enough water to cover the chicken. Cover with a lid and cook for about an hour until the meat is tender. You may need to add more water.
- Chicken breast: 2 pieces
- Sage: pinch
- Thyme: to taste

Remove the container from the oven and let it cool. Melt the butter. Transfer the chicken to a food processor with a little broth, blend well until it reaches a pâté-like consistency, add the butter, and mix until smooth. Add more broth if necessary.
