Preheat the oven to 220 degrees.

Thoroughly wash the potatoes under cold running water and dry them well.
- New potatoes: 800 g

Place the potato on the cutting board and carefully slice it thinly without cutting all the way through.

Repeat this procedure with the remaining potatoes.

Place the potatoes in a baking dish or cast iron skillet (make sure the handle is also cast iron and can be placed in the oven).

Sprinkle the potatoes with oil and thoroughly coat the cuts.
- Olive oil: 2 tablespoons

Sprinkle the potatoes with chopped rosemary, salt, and pepper.
- Freshly chopped rosemary: 1 tablespoon
- Salt: to taste
- Ground black pepper: to taste

Bake the potatoes until they are golden and crispy. This will take about 40-45 minutes.
