Fried Halloumi Cheese with Lime Caper Dressing

Remove the wrapper from the cheese and dry it with a towel, then cut it into 8 pieces.
- Halloumi cheese: 250 g

Prepare the dressing. In a small bowl, whisk together lime juice and zest, capers, garlic, coriander, grainy mustard, white wine vinegar, 2 tbsp of vegetable oil, and add salt and pepper.
- Lime: 1 piece
- Capers: 1 tablespoon
- Garlic: 1 clove
- Ground coriander: 1 tablespoon
- Grainy mustard: 1 teaspoon
- White wine vinegar: 1 tablespoon
- Olive oil: 4 tablespoons
- Salt: to taste
- Ground black pepper: to taste

Heat olive oil in a pan. Coat cheese slices in flour mixed with salt and pepper, and fry for 2 minutes (1 minute on each side).
