Vegan dumplings with eggplant and smoked tofu are an original dish of Russian cuisine that reflects a modern approach to traditional flavors. Instead of the classic meat filling, a spicy mix of eggplant, smoked tofu, and green peas is used, seasoned with thyme and oregano. The dough made with boiling water is elastic and tender, perfectly holding the juicy filling. Prepare all the ingredients.

Sift the flour into a bowl, add salt and oil.
- Wheat flour: 300 g
- Vegetable oil: 2 tablespoons

Slowly pour in boiling water while mixing the dough with a spatula.
- Boiling water: 250 ml

Knead the dough until it is elastic; it should not stick to your hands. If it does stick, add a little more flour. Roll the dough into a ball, cover with plastic wrap or a lid, and let it rest for 30 minutes to an hour.
- Wheat flour: 300 g

Cut the eggplants into small cubes and fry them with spices in a small amount of vegetable oil.
- Eggplants: 1 piece
- Vegetable oil: 2 tablespoons
- Dried thyme: to taste
- Dried oregano: to taste

Add finely chopped (or crumbled) tofu and peas (if frozen - thaw them). Season with pepper and salt.
- Smoked Tofu: 150 g
- Green peas: 100 g
- Salt: to taste
- Ground black pepper: to taste

Roll out the dough into a thin layer on a floured table.
- Wheat flour: 300 g

Cut circles with a glass, place a teaspoon of filling in the center of each, and seal the dumplings. If making dumplings in advance, place them on a cutting board as they are ready and put them in the freezer. Once they are firm, transfer to a bag and store in the freezer.

If boiling dumplings immediately, they should be added to boiling water for 5 minutes. No need to salt the water.
