Egg noodles with beef in beer a la Stroganoff is an original variation of the classic dish that appeared in Russia in the 19th century. Here, tender pieces of beef are simmered in a rich beer sauce enriched with sour cream and spices. Dark beer adds depth of flavor, making the meat especially tender and aromatic, while paprika gives a slight spiciness. Oyster mushrooms and sweet peppers complement the composition with their earthy and fresh notes, while pickled cucumber refreshes and balances the taste. Prepare all the ingredients.

Clean the meat and cut it into noodles of 3–4 cm.
- Beef fillet: 300 g

Slice the onion into half rings.

Remove seeds from the pepper and cut it into strips.
- Red sweet pepper: 1 piece

Tear or cut the mushrooms into small pieces.
- Oyster mushrooms: 250 g

Chop the garlic.
- Garlic: 2 cloves

Boil salted water in a large pot. Add the noodles to the pot and cook for 1.5 minutes.
- Egg noodles: 100 g

Then drain into a colander and quickly rinse under cold water.

In a large skillet, heat vegetable oil and fry the onion over high heat for 1 minute.
- Vegetable oil: 2 tablespoons

Add mushrooms and garlic, fry for 2-3 minutes until the mushrooms release their water and lightly brown.
- Oyster mushrooms: 250 g

Add meat and sweet pepper, stir-frying until golden brown, this will take about 5 minutes.
- Beef fillet: 300 g
- Red sweet pepper: 1 piece

Pour beer into the pan, let it evaporate while heating for 5 minutes.
- Dark beer: 200 ml

Mix sour cream with paprika, adding a little flour and salt.
- Fat sour cream: 200 g
- Paprika: to taste
- Wheat flour: 0.5 teaspoon
- Salt: to taste

Pour the mixture into the pan and simmer the meat on low heat, stirring, for another 5-7 minutes.

Place nests of noodles on the plate, top with meat, and generously pour sour cream sauce over it. Sprinkle with greens and place a pickled cucumber beside it.
