Flounder with caper and lemon butter is an exquisite dish of Russian cuisine that combines tender fish with a fragrant, creamy sauce. The flounder has a mild flavor and delicate texture, covered with a golden crust that highlights its freshness. The caper and lemon butter adds zest and subtle acidity, creating a balance of flavors. Capers contribute a light saltiness while parsley refreshes the composition. This dish is perfect for both festive dinners and cozy family evenings, revealing a palette of flavors with each bite. It is easy to prepare but results in restaurant-level quality. Served hot with crispy bread or a light garnish to emphasize its unique taste.

1
Coat the fish in flour mixed with salt and pepper.
- Flounder: 2 pieces
- Wheat flour: 85 g
- Sea salt: to taste
- Ground black pepper: to taste

Place a large non-stick pan on high heat, pour in oil, and wait for it to heat up. Add the fish to the oil and shake the pan to ensure the fish doesn't stick. Leave the fish for 4 minutes until a golden crust forms, then flip the fish and cook for another 4 minutes (without touching).
- Olive oil: 3 tablespoons

While the fish is cooking, prepare the oil from capers and lemon. Heat a small pan over medium heat, add the oil, and wait for it to start bubbling. Then stir the oil with a wooden spoon until the foam starts to subside and turn brown. Quickly add the capers, lemon juice, and chopped parsley. Continuously stir the mixture actively. Remove from heat and do not cool.
