Sugo is a traditional Italian tomato sauce that serves as the base for many Mediterranean dishes. Its history dates back centuries when the simple yet rich flavors of tomatoes, garlic, and olive oil became an integral part of Italian gastronomy. Sugo has a vibrant aroma of fresh tomatoes, highlighted by gentle sweetness and mild spiciness. Basil adds freshness while garlic and pepper provide zest. This sauce pairs perfectly with pasta, meat, or simply bread, turning even the simplest dish into a culinary masterpiece. Its secret lies in slow simmering, allowing the ingredients to unfold and create a harmonious depth of flavor.

1
In a deep skillet, heat olive oil and sauté garlic (and pepper if cooking with it).
- Olive oil: 7 tablespoons
- Garlic: 2 cloves
- Red chilli pepper: 1 piece
2
Add tomatoes, salt, black pepper, and a pinch of sugar.
- Canned tomatoes: 1 jar
- Salt: to taste
- Ground black pepper: to taste
- Sugar: to taste
3
Bring to a light boil and simmer on low heat for 30 minutes. If the tomatoes in the jar are whole, mash them in the pan with a wooden spoon.
4
Remove the pan from the heat, add the basil leaves (remember that if you chop the leaves, they will lose some aroma, they should be torn by hand) and let it sit for a while to infuse the sauce with their aroma.
