Many people criticize okra for being too tough, but they just don't know how to cook it. Before you put okra in a frying pan, you definitely need to cut off the stalk - then after a short temperature test, it turns into the most tender flesh that you want to eat endlessly. The seeds are also important in the texture of okra: you should try to leave them in place when you separate the stalk from the pod. A good recipe for vegans - simple and bright.

Cut the stems of the okra, trying not to expose the seeds.

Sprinkle the okra with salt, squeeze lemon juice, mix and let it sit for 20-30 minutes.
- Salt: to taste
- Lemon: 0.5 piece

Peel the onion and chop it into medium cubes.

Heat oil in a pan and fry the onion until golden.
- Olive oil: 50 ml
- Onion: 1 head

Add tomatoes, sugar, and chili flakes to the onion, bring to a boil, cover with a lid, and simmer for 15-20 minutes on low heat.
- Canned tomatoes in pieces: 300 g
- Sugar: 0.5 teaspoon
- Chili pepper flakes: to taste

Place the okra in the pan along with the juices collected in the bowl, mix, cover again and simmer for another 15-20 minutes. When the okra changes color from bright green to dull, it will be ready.

At the end, pepper and salt the dish if necessary.

Finely chop the parsley and sprinkle it over the cooked okra. It can be served as a standalone dish or complemented with a side of rice or noodles.
