Cut the chicken meat into pieces and pass it twice through a meat grinder with bread soaked in milk.
- Chicken: 50 g
- White bread: 20 g

Pass this mass through a hair sieve, salt it, and dilute with milk to the consistency of porridge, then add 1/2 raw yolk and a well-beaten egg white, mixing gently from bottom to top to avoid crushing the white, place in a small cup (aluminum, enamel, or porcelain) generously greased with butter and sprinkle with sifted breadcrumbs.
