Chinese sweet and sour chicken is a vibrant and aromatic dish that embodies the balance of flavors prized in Chinese cuisine. Its origins trace back to ancient traditions of combining meat with fruits and sweet-sour notes common in southern China. A juicy piece of chicken marinated in soy sauce gains a rich flavor complemented by a thick, slightly caramelized sauce made from tomatoes, apple vinegar, and pineapple. Vegetables add freshness, and serving it with fluffy rice makes it perfect for everyday dinners or festive gatherings.

1
Cut the chicken fillet into thin strips, place in a bowl, pour in soy sauce (about 6 tablespoons), and add a little pepper.
- Chicken fillet: 500 g
- Soy sauce: 10 tablespoons
- Sugar: 5 teaspoon
2
To prepare the sauce, mix vinegar, soy sauce (about 4 tablespoons), and tomato paste in a deep pan, preferably a wok. Heat it up, adding part of the sugar. Add water, sliced bell pepper, canned pineapple, and tomatoes. Taste it. If the sauce is too sour, add the remaining sugar. Simmer on low heat for about 10 minutes. The vegetables should remain slightly firm. The sauce should be moderately thick.
- Apple cider vinegar: 40 ml
- Soy sauce: 10 tablespoons
- Tomato paste: 2 tablespoons
- Sugar: 5 teaspoon
- Water: 0.5 glass
- Sweet pepper: 1 piece
- Canned pineapple: 1 piece
- Tomatoes: 2 pieces
