Put the beans in a pot and cover with water. Bring to a boil over low heat, then drain. Return the beans to a clean pot and cover with cold water, bring to a boil again and simmer for 15 minutes. Add 250 ml of cold water, return to heat and cook for another 15 minutes. Repeat the process once more. Add ham, bacon, and bouquet garni, and cook for another 1.5 hours until the beans are almost soft. If needed, add more cold water to prevent the beans from drying out.

Closer to the end, heat oil in a pan, add fresh sausages, and cook on low heat, turning until they are crispy.
