Kalbi Rib with Bulgur

Korean dish kalbi, which is a grilled beef rib. A handful of bulgur calms its bright taste. The recipe was shared with us by the chef of the Drinks @ Dinners restaurant Evgeny Mikhailov.

Fry the vegetables, except for the onion, and the ribs in a pan, place them in a dish, and add broth and soy sauce. Cover tightly with several layers of foil. Place in the oven at 180 degrees for 3 hours.
- Beef ribs: 1 kg
- Soy sauce: 300 ml
- Chicken broth: 3 l
- Carrot: 100 g
- Celery: 50 g
- Garlic: 50 g

Boil bulgur in water at a ratio of 1:2. After boiling, cover the pot and cook for 15-20 minutes. Sauté chopped onion in butter and mix it into the cooked bulgur.
- Bulgur: 60 g
- Onion: 120 g
- Butter: 20 g

Cut the cooked ribs and remove the bones. You can fry them a little until a thin crust forms.

Serve the ribs and bulgur on a plate, drizzle with demi-glace sauce, and garnish with cilantro.
