Prepare chilled chicken drumsticks. Cut off the cartilaginous part from the drumstick. Pull the meat away from the bone. Take foil and tightly wrap the bones of each thigh.

Prepare the breading: mix starch, flour, paprika, black pepper, chicken seasoning, and curry.

Coat each thigh in the resulting mixture. Place the resulting semi-finished products on a rack.

Place the shins in the preheated oven. Bake for 40 minutes at 200 degrees until a crispy crust forms.

Preparing the glaze sauce. Pour rice vinegar into a saucepan, add cane sugar, ketchup, sriracha sauce, sesame oil, salt, pepper, and minced garlic. Mix everything together. Check for taste.

Take the baked drumsticks out of the oven, and if the crust is hard — that's good. Pour sauce over the meat part.

Send the finished dish to the oven for another 5 minutes at 200 degrees. After 5 minutes, take it out of the oven, place it on a plate, and sprinkle with sesame.
