Boil the potatoes in a large amount of salted water until half cooked. Drain.
- Potato: 4 pieces

Preheat the oven to 180 degrees. Pour vegetable oil into a pan or ovenproof dish. Add potatoes and onions, season to taste with salt, and mix well in the oil.
- Vegetable oil: 20 ml
- Red onion: 2 heads
- Potato: 4 pieces

Place mushrooms between the potatoes and onions and put everything in a preheated oven. Bake for 15-20 minutes. The vegetables should brown, and the mushrooms should soften.
- Champignons: 300 g

Add garlic and half of the zest to the baked vegetables, mix well, and put back in the oven for another 5 minutes.
