Hingal is a traditional dish of Azerbaijani cuisine that combines tender dough, juicy meat, and aromatic sauce. Its origin is linked to the pastoral traditions of mountainous regions where the dough served as the base for a nutritious and hearty meal. The taste of hingal resembles homemade pasta but with Eastern notes: golden onions and spicy filling create a rich aroma, while garlic sour cream sauce adds softness and zest. Hingal is often served in family gatherings, especially in cold weather when warming food is desired. It can be garnished with fresh herbs like cilantro for added freshness. This dish embodies the hospitality and coziness of Azerbaijani cuisine, being more than just food but part of cultural traditions.

Chop the onion into small cubes and place it in a pan. Pour in plenty of oil and fry on high heat until lightly golden, but do not overcook, or the onion will turn to stone.
