Boil the beef tongue for 2–2.5 hours. Then clean and slice it into pieces about one and a half centimeters thick.

Boil the peas in a small amount of water with butter, salt, and pepper for 3-5 minutes, then mash.
- Green peas: 480 g
- Butter: 50 g

Fry cherry tomatoes in a deep fryer for 15 seconds.

Grill the slices of tongue for 2-3 minutes on each side. Place on a plate with mashed potatoes, peas, and fried cherry tomatoes beside it. Garnish with a green onion arrow, balsamic cream, and olive oil.
