Parmentier with tongue

This recipe uses the Tefal Optigrill and its roasting attachment.

Boil the peeled potatoes until cooked for 30 minutes.
- Potato: 700 g

Finely chop the boiled beef tongue.
- Boiled beef tongue: 500 g

Install the roasting attachment in the Optigrill, select the red temperature level in manual mode. Sauté chopped onion in a mixture of 10 g of butter and vegetable oil until translucent, then add minced garlic.
- Onion: 1 piece
- Garlic: 2 cloves
- Butter: 90 g
- Vegetable oil: 10 ml

Mix minced meat with onion and garlic, add chopped parsley, salt, and pepper. Cover and cook for 5 minutes. Then let it cool slightly.
- Boiled beef tongue: 500 g
- Onion: 1 piece
- Garlic: 2 cloves
- Parsley: 20 g
- Salt: to taste
- Ground black pepper: to taste

Pass the boiled potatoes through a vegetable mill or mash them. Heat milk with butter in a saucepan, pour it into the puree, and stir over low heat to evaporate excess liquid.
- Potato: 700 g
- Milk: 170 ml
- Butter: 90 g

Mix raw egg into the minced meat, transfer it to the Optigrill baking attachment, spread mashed potatoes evenly on top, and sprinkle with breadcrumbs. Select the orange temperature level in manual mode and cook for 25 minutes.
- Chicken egg: 1 piece
- Breadcrumbs: 30 g
