Make a deep cut on the ham, open it slightly, and carefully cut out the bone.

Crush peppercorns, cumin and coriander seeds, sea salt in a mortar and add nutmeg to them.

Bundle the green twigs, place them on the meat with garlic, and add 1/3 of the spices.

Roll the meat into a roulade and tie it with cooking twine.

Fry the roll in a heated pan with olive oil for 4 minutes on each side.
- Olive oil: 3 tablespoons

Transfer the meat to a dish and rub with the remaining spices.
- Coriander seeds: 1 teaspoon
- Cumin seeds (jeera): 1 teaspoon
- Black peppercorns: 6 pieces
- Sea salt: to taste

Cover the form with foil and bake in a preheated oven at 200°C for about 1 hour. Remove the foil and let it brown for 15 minutes.
