Raf is a drink that is now prepared in coffee shops all over Russia, from Kaliningrad to Irkutsk, from Murmansk to Sochi. It is made in Barcelona, Prague and New York. But raf was invented in Moscow - in 1996 or 1997. Rafael Timerbaev, one of the regular visitors of the Coffee Bean coffee shop on Kuznetsky Most, categorically did not drink coffee. Baristas made him different coffee drinks more than once, but Rafael still did not like the taste. And then one day a miracle happened: he fell in love with coffee. To do this, he needed to add cream and vanilla sugar to espresso - and this is how the recipe for a cocktail was created, which was first called "like Raf's" because Rafael's many friends began to order it. And then the name was shortened to "raf". Now there are many variations of raf - from lavender to citrus, but in the classic version there are only three components.

Make a double espresso. Any coffee, light or dark roast, will do. However, the key is that the flavor of the coffee should be hinted at in the raff, as it is a creamy and airy drink.
- Espresso: 80 ml

Add sugar and pour in the cream.
- Vanilla sugar: 4 teaspoons
- Cream: 300 ml

Whip until a homogeneous stable foam forms. Pour into a warmed cup and serve. In cafes, coffee is whipped with a steam wand. At home, you can whip it with a battery-operated frother; in this case, the cream should be warmed.
