Put crushed ice in a rocks glass, pour absinthe, and add a little water.
- Absinthe: 1 dash

Put sugar at the bottom of the glass for mixing. Pour bitters over it and crush the sugar with a pestle.
- Sugar: 3 g
- Peychaud's Bitters: 70 ml

Add ice to the mixing glass, pour in the cognac. Stir. Pour the contents from the chilled absinthe rocks glass.
- Cognac: 50 ml

Filter the contents of the mixing glass into a rocks glass. Squeeze a strip of lemon zest and drop it into the glass.
